Description

A hearty lamb stew with spices & honey

Ingredients

3 lbs 1 1/2 kilos) deboned shoulder of lamb (leg can also be used but is less flavoursome)

3  medium/large  potatoes, peeled and quartered

2 onions, diced 

4 carrots, sliced 

3 tsp cinnamon 

2 tsp paprika 

1/4 tsp saffron 

2 tsp garlic powder or 3 tsp minced fresh garlic

1 1/2 tsp freshly ground black pepper 

3 tbs honey 

1 tsp salt 

3 tblsp olive oil 

water 

Instructions

1 Lightly brown the lamb in 2 tbs olive oil in a frying pan then place in slow cooker

2 In the same frying pan, sauté the onions with all the spices and add to the slow cooker

3 Add the carrots, potatoes and enough water to just cover the meat

4 Pour the honey on top, add the salt, cover & cook for 8 hours medium or 12 hours slow heat setting

5 Serve when meat is tender
