Hearty beef pie with vegetables

.1 pound (450 gms.) organic  beef mince

1 pound good (450 gms)quality bacon cut int0 2 inch strips

1 large white onion, diced

2 cups diced carrots

2 cups diced celery

1 cup diced zucchini or yellow button squash

2 large heads cauliflower, trimmed, chopped and steamed until very soft

1 tsp freshly ground black pepper

½ tsp smoked paprika

1 cup beef or chicken stock

½ teaspoon sea salt or to taste

2 tbs olive oil + 1-2 tbs for cauliflower


1 Preheat oven to 350 F. (175 c.)

2 Heat 2 tbs olive oil in a very large frying pan

3 Sauté onion on a medium heat for 15 minutes or until soft

4. Add bacon to pan and cook over medium heat until cooked, about 10 minutes. Put aside about half of the bacon fat

5 Add carrots, zucchini and celery to pan and cook for a further 10 minutes until soft, set aside

6 In a separate pan add the reserved bacon fat and brown the beef mince. Add to vegetable mix and simmer on a medium/low heat

7 Season with salt, pepper and smoked paprika

8 Add beef or chicken stock and reduce  until 60% evaporated

9 Meanwhile put the cauliflower in a food processor/blender and puree with olive oil until smooth

10 Pour ground beef/vegetable mix into a 9x13 inches (23cms X 33cms.) baking dish

11 Pour cauliflower puree over beef & vegetable mix

11. Bake at 350° for 30 minutes

12. Serve hot

Note. An alternative to cauliflower is to cover the mix with mashed potatoes glazed with a little milk
