Ingredients

For the cupcakes.

  • 1 cup all-purpose/plain flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs room temperature

For cinnamon cream cheese frosting.

  • 12 tablespoons unsalted butter, at room temperature
  • 1 (8-ounce) package cream cheese, at room temperature
  • 3 cups confectioners' /icing sugar sifted
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pumpkins candy or other Halloween candies, for garnish (optional)

For maple cream cheese frosting (Optional #).

  • 8 tablespoons unsalted butter, at room temperature
  • 8 cups confectioner's/icing sugar, sifted
  • 1/2 teaspoon pure vanilla extract
  • 12 ounces cream cheese, at room temperature
  • 1/2 cup pure maple syrup

# The quantities for the frostings above are for 12 cupcakes. If you wish to use both frostings halve the frosting quantities or double the cupcake ingredient quantities for 24 cupcakes.
