Traditional pork stew/casserole

Main Ingredient Pork


I kg (2 1/4 Pound) Cubed

1 head/bulb garlic, minced

1/2  white or yellow medium  onion, diced

1 1/2 inch piece of minced ginger

1/2 cup soy sauce

1 cup vinegar

2 cups of water

1 teaspoon paprika

5 bay leaves

4 tablespoons of cooking oil or olive oil

2 tablespoons cornstarch

Salt and pepper to taste

3 tablespoons water


1 In a large saucepan heat 2 tbs of oil on medium heat & sauté onions, ginger and garlic

2 Add chicken, 2 cups water, 1/4 cup soy sauce, vinegar, paprika and bay leaves.

3 Bring to a boil then cover & simmer on low heat for 30 minutes until meat is tender

4 Remove pork and in another pan add rest of oil and heat. Add pork and on a medium/high heat brown the meat

5 Return pork to previous pan, mix with sauce and add cornstarch (mixed in water to dissolve) to thicken

6 Add salt & pepper to taste

7 Bring to the boil & simmer for 5 minutes

8 Serve with hot steamed white rice
