Traditional chilli flavoured pasta

Main Ingredient Pasta


400 g (14 oz) Penne pasta 

90 ml (3 ½ oz) Extra virgin olive oil

2 Cloves of garlic (finely chopped)

2 or 3 whole red chillies or to taste (roughly chopped) 

500 g (1.1 lb) chopped medium tomatoes 

A small handful of flat leaf parsley (roughly chopped) or basil.

Salt for seasoning 



1 Heat oil in a sauté (frying ) pan over a medium heat, add the garlic & chilli and cook for a few minutes until garlic is lightly browned

2 Add the chopped tomatoes, add salt to taste, stir and cook over medium heat for 20 -25 minutes

3 Meanwhile ,about 15 minutes after starting  cooking the tomatoes mix, place the pasta in salted boiling water (a little olive oil can be added)and cook until al dente

4 Drain pasta and add to the tomato mix while pan is still hot, stir for a few seconds to coat the pasta

5 Sprinkle with parsley (or basil) and serve
