Pecan/Apple Cheesecake with Gluten-Free Graham Cracker Crust.

Main Ingredient Pumpkin Puree/Pecans




  • 16 ounces cream cheese, softened
  • 1/2 Cup sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla
  • 4 Cups thinly sliced peeled apples
  • 1/3 Cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 Cup chopped pecans
  • Caramel sauce for topping (optional)

Pie Crust

  1. Line a 9-inch spring-form pan with parchment/baking paper
  2. Combine crumbs, sugar, cinnamon and butter, press onto bottom of  pan.
  3. Bake at 350 F. for 10 minutes. Set Aside


  1. Combine cream cheese and sugar, mixing at medium speed on electric mixer, until well blended.
  2. Add eggs, one at a time, mixing well after each addition. Blend in vanilla, pour over crust. Toss apples with combined sugar and cinnamon.
  3. Spoon apple mixture over cream cheese layer; sprinkle with pecans. Bake at 350 F. for  1 hour and 10 minutes.
  4. Loosen cake from rim of pan; cool before removing rim of pan. Chill.
  5. Served topped with caramel sauce if desired
