Cooking time 1 1/2 hours + cooling time (overnight preferable)
Main Ingredient Eggs


4 egg whites (at room temperature)

190g  (7 ounces) castor sugar

1 teaspoon cornflour

1 teaspoon lemon juice

Mix of passionfruit, kiwi fruit, blue berries, strawberries, bananas or fresh fruits of choice

300ml (10 ounces) cream


1 Preheat oven to 130 C (265 F)

2 Beat the egg whites in an electric mixer until fluffy 

3 Slowly add the sugar while mixing and continue beating until the mixture is thick & glossy and peaks hold their shape

4 Beat in the corn flour and lemon juice

5 Line a baking tray with greased baking paper, spread the mix in a circular shape about 12 inches (30 cms) in diameter

5 Bake for 1  1/2 hours until firm

6 Turn off the oven leaving the pavlova inside until it cools (leaving overnight in oven helps improve the base)

7 Cut the passionfruit in half and extract the pulp (tinned passionfruit can be substituted) 

8 Spread cream over the pavlova and cover with freash fruit
