Description

Main Ingredient Oats

Ingredients

  • 25 grams organic butter
  • 2 tbsp.organic maple syrup or organic honey
  • 1 cup organic spelt flour
  • 1 cup organic rolled oats
  • 1 cup organic desiccated coconut
  • 3/4 cup organic rapadura or raw  sugar
  • 2 tbsp water
  • 1/2 tsp bicarbonate of soda
  • 1/2 cup (approx.) dried fruit such as sultanas or cranberries and/or unsalted nuts of choice such as macadamia

Instructions

  1. Preheat oven to 175 C.
  2. Grease or line two baking trays with parchment/baking paper .
  3. In a saucepan melt the butter and maple syrup(or honey) together  over a low heat.
  4. In a bowl combine the flour, oats, coconut and rapadura/raw sugar.
  5. Stir the water and the bicarbonate of soda into the butter and syrup mixture, add to the dry mixture and mix thoroughly.
  6. Stir through macadamia nuts & cranberries if you are using these. Once combined, spoon mixture into balls.
  7. Place them on the baking trays, spaced well apart.
  8. Bake for about 15 minutes, or until golden. Cool on wire wracks. 

 Note: You may not need as much sugar if you are adding dried fruit due to the natural sweetness from the fruit.
