Ingredients
- 25 grams organic butter
- 2 tbsp.organic maple syrup or organic honey
- 1 cup organic spelt flour
- 1 cup organic rolled oats
- 1 cup organic desiccated coconut
- 3/4 cup organic rapadura or raw sugar
- 2 tbsp water
- 1/2 tsp bicarbonate of soda
- 1/2 cup (approx.) dried fruit such as sultanas or cranberries and/or unsalted nuts of choice such as macadamia
Instructions
- Preheat oven to 175 C.
- Grease or line two baking trays with parchment/baking paper .
- In a saucepan melt the butter and maple syrup(or honey) together over a low heat.
- In a bowl combine the flour, oats, coconut and rapadura/raw sugar.
- Stir the water and the bicarbonate of soda into the butter and syrup mixture, add to the dry mixture and mix thoroughly.
- Stir through macadamia nuts & cranberries if you are using these. Once combined, spoon mixture into balls.
- Place them on the baking trays, spaced well apart.
- Bake for about 15 minutes, or until golden. Cool on wire wracks.
Note: You may not need as much sugar if you are adding dried fruit due to the natural sweetness from the fruit.
