Main Ingredient Bulgur (cracked wheat)


2 cups bulgur (cracked wheat)

1/3 cup vegetable oil

1/4 cup fresh lemon juice

1/4 teaspoon salt

1/4 teaspoon sugar

1 teaspoon grated lemon zest 

1/4 teaspoon ground cumin

1/4 cup finely chopped fresh mint leaves

1/4 cup finely chopped  (coriander)cilantro leaves


1 Place Bulgar (cracked wheat) in a large bowl and cover with 4 cups of warm water

2 Let stand for 1 hour and than drain well in a colander

3 Meanwhile in another bowl, mix together lemon juice, salt, sugar, oil, lemon zest, cumin cilantro (coriander) and mint.

4 Add drained Bulgar and mix well, Cover and place in refrigerator for 2 hours.

4 Serve either at room temperature or chilled
