3 cloves garlic minced or to taste
2 medium white onions thinly sliced
1 green chilli seeds removed chopped (optional)
1 cup of green lentils (washed & drained)
400 gms (14 oz) fresh tomatoes chopped (canned diced tomatoes are an option)
1 cup good quality red wine
1 carrot chopped
1 stick of celery inc. Leave finely chopped
1 tsp dried thyme
Salt Pepper & pepper to taste
1 tbs olive oil
Whole grain pasta of choice
1. Fry garlic, onion and chilli until the onion is clear.
2 Add lentils and 1 cup of water. Simmer until lentils are soft
3 Add more water if required water
4 Add dry thyme, carrot & celery
5. Add tomatoes and red wine, simmer for 10 minutes or till mixture thickens
6. Add salt and pepper to taste.
7 While lentil mix is reducing, heat salted water for pasta & cook as per packet instructions, when cooked drain well.
8 Add pasta to lentil mix, mix well & serve while hot
