Traditional caramel flavoured flan


Yield 4 to 6 servings

Main Ingredient Eggs


 (390g) can evaporated milk

 (390g) can condensed milk

10 egg yolks

1 teaspoon of vanilla extract or lemon essence

For the caramel:

1 cup sugar

3/4 cup water


1 In a saucepan, mix the sugar & water. Bring to a boil for a few minutes until the sugar caramelize be careful not to burn

2 Pour the caramelized sugar into a 12 inch flan dish and spread the caramel on the bottom of the dish

3 Mix well the evaporated milk, condensed milk, egg yolks and vanilla by hand or in a  blender.

4 Gently pour the mixture on top of the caramel and fill to about 1 to  1 1/4 inch thick.

5 Cover the flan with aluminium foil.

6 Preheat oven to 375 F

7 Pace the flan dish on a larger baking pan half filled with very hot water. Bake for 45 minutes

8 The flan is cooked when you insert a knife & it comes out clean

9  Let cool then refrigerate.

10 To serve run a thin knife around the edges of the flan to loosen the Leche Flan. 

11  Place a platter/large plate on top of the mould and quickly turn upside down to position the golden brown caramel on top.
