Grilled chicken in spicy Jerk sauce


Yield 4 servings
Preparation time 20 mins + 1-2 hours marinating (best left overnight)
Cooking time 15 - 20 mins
Main Ingredient Chicken


4 Chicken breasts,6 to 8 oz, (170- 200 gms)trimmed of fat

1 tbs. Ground allspice

1 tbs. Dried thyme

1 1/2 tsp. Cayenne pepper

2 cups chopped large white onions 

1 1/2 tsp. Freshly ground black pepper

1 1/2 tsp. Ground sage

3/4 tsp. Ground nutmeg

3/4 tsp. Ground cinnamon

2 tbs. Salt (to taste)

2 tbs. Garlic powder (or minced garlic)


1 Mix in a large bowl the allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder (or minced) and sugar.

2 Whisk slowly adding the olive oil, soy sauce, vinegar, orange juice, and lime juice. Add the Scotch bonnet (habanera) pepper, onion, and green onions and mix well

3 Add the chicken breasts, coating all over. Cover & marinate, refrigerate for 1 - 2 hours ,preferably overnight.

4 Heat the BBQ grill. Remove chicken from marinade and grill on each side for 6- 10 minutes or until cooked. Baste with marinade while grilling chicken.

5 Serve with fresh summer salad or fried rice
