Traditional Easter fruit cake with stout


Yield Makes two meat loaf pans.
Preparation time 20-25 minutes
Cooking time 1 1/4 hours
Main Ingredient Candied fruits


  • 3½ cups all-purpose/plain flour

  • 1½ cups sugar

  • 4 tsp. baking powder

  • 1 cup stout (Guiness) or a dark beer

  • 1 egg (beaten)

  • 2 tblsp. spoon melted butter or margarine

  • 2 tsps. vanilla essence

  • 2 tbs molasses

  • 1 cup glace/candied cherries

  • 1 cup raisins, mixed peel, cherries ( One cup total. Combine fruit as desired.)

  • ½ tsp. ground allspice

  • pinch of salt

  • 1 tblsp. spoon nutmeg

  • ½ tblsp. spoon cinnamon

  • ½ tbs rosewater 

  • ½ tblsp. spoon anise extract


  1. In a large mixing bowl, mix together flour, salt, baking powder, spices and sugar.

  2. Mix thoroughly and add fruit (2 cups). Make a well in the center of mixture and add melted butter and beaten egg. Mix again until like coarse bread crumbs.

  3. Make another well in center of mixture and add molassis, beer/stout. Mix the whole thoroughly and turn intotwo well greased baking/meat loaf pans.

  4. Bake for 1¼ hours at 300 ° F.

  5. If desired, press a few whole cherries into the top of each bun/loaf.
