Refreshing cold soup

Main Ingredient Tomatoes/green peppers (capsicums)


10 ounces (300 gms.) white bread

21 ounce (625 gms.) of fresh ripe tomatoes chopped

2 cloves garlic minced

2 medium white onions chopped

2 red & green peepers (capsicums) seeds removed

1 cucumber peeled & seeds removed

1 Long green chilli (optional)

7 tbs olive oil

2 tbs vinegar

1 1/2 tbs chilled water

1 tsp ground cumin

salt & white pepper to taste for seasoning

Toasted garlic bread for serving

Parsley or similar for garnish


1 Soak bread in a little water then gently squeeze to remove excess water

2 Mix all the ingredients in a large bowl adding the water to help combine

3 Transfer the gazpacho mix to a blender/food processor and mix to desired consistency. The soup should have a  slightly chunky appearance - do not over blend 

4 Taste & adjust seasoning to taste.

5 Cut toast into cubes & sprinkle over Individual servings

6 Refrigerate  for later use
