3/4 pound (350 gms.) turkey or beef mince
1/3 cup chopped onion
1 garlic clove, minced
1 tablespoon olive oil
3/4 cup of prepared salsa mild to hot to taste
1 tablespoon cornmeal
2 teaspoons chilli powder
1-1/2 teaspoons ground cumin
1 teaspoon dried oregano
1 Place the topping in a food processor and blend until well mixed
2 In a large skillet/ frying pan, cook the turkey or beef mince, onion and garlic in oil over medium heat until meat is just turning brown.
3 Remove from the heat; stir in the salsa, cornmeal and seasonings.
4 Spoon 1/3 cup of the meat mixture down the centre of each tortilla; top with 2 tablespoons cheese. Roll up and place seam side down in a greased 11-in. x 7-in. (30 cm x 20 cms) baking dish.
5 Spoon corn mixture over the top; sprinkle with olives and remaining cheese.
6 Cover and bake at 350 F. (175 C.) for 30 minutes. Uncover; bake 5-10 minutes longer or until heated through.
7 Remove from oven. Top each with a tablespoon of sour cream (optional)
8 Serve with a fresh salad and/or guacamole
