Traditional spicy Mexican stew


Yield 6 to 8 servings
Preparation time 15 minutes
Cooking time 2 hrs. 15 mins
Main Ingredient Pork


2 lbs Pork diced into bite sized pieces

1/4 cup Cooking Oil

1 cup  white onion, chopped

2 cloves garlic minced

1 Tbsp  plain flour

1/2 -1 cup green chillies adjusted to taste ( large chillies are usually milder than small)

1 tsp black pepper, ground

1/4 tsp ground coriander

1/2 tsp Oregano, dried


1 Heat oil in a large pan and brown meat

2 Add onion & garlic and cook until onion is translucent but not brown

3 Slowly add flour stirring until well bended

4 Add the rest of ingredients ( except eggs)and simmer, uncovered until meat is tender -  about 2 hours

5 The stew should have a thick consistency, if too thin add 1 Tsp cornflour first dissolved in warm water

6 The stew is traditionally served  with poached eggs added to mix. It is easier, if you decide to have eggs to poach separately and place a cooked egg in the bottom of each individual dish

7 Serve with bread or fresh salad
