Spicy chicken tortilla

Main Ingredient Chicken


10 taco sized  soft flour tortillas

16 oz. (450 gms) jar taco sauce  medium or hot - to taste

5 cups cooked Chicken chopped

1 small Onion diced

2 to 2 1/2 tsp. Ground cumin

1 1/2 tsp. dried oregano

1 tsp. Salt

2- 3 cups Cheddar Cheese shredded

Toppings: Guacamole, Sour Cream, Shredded Lettuce and Diced Tomato


1 Mix 1 1/2 cups taco sauce, chicken, onion, oregano and salt in a large saucepan

2 Cook over a medium/high heat for 25 minutes, stirring often or until most of the liquid has evaporated

3 Spoon 1/3 cup 0f mixture below the centre of each tortilla and top with 2 tablespoons of grated cheese

4 Fold over 2 sides of tortilla to enclose filling then fold over top & bottom edges to make a rectangle

5 Secure with wooden picks. Place greased baking sheets in bottom of baking dish/Dutch oven

6 Put tortillas face down on baking paper, spray top with cooking oil

7 Bake at 425 F (220 C) for 8 minutes then turn and bake for 5 more minutes.

8 Remove picks, top with remaining sauce.

9 Serve with sour cream, shredded lettuce, diced tomato & guacamole (avocado)
