BBQ prawns with lime & chillie marinade- perfect summer dish

Ingredients

24 large green prawns, cleaned/deveined
2 limes, zested and juiced
2 green chillies, seeded and chopped
2 cloves garlic, minced
2.5cm piece fresh ginger, grated
1 small onion, coarsely chopped
1 tsp fish sauce (optional)
1 small red chilli, seeds removed & chopped (optional for a hotter version)

Instructions

1 Place the prawns and lime peel in a large, non-metallic bowl. (You may remove the heads & shells of the prawns if preferred)
2 Place the lime juice, chillies, garlic, ginger and onion in a food processor or blender, and process until smooth, if necessary adding a little oil to facilitate blending. 
3 Pour over the bowl of prawns, and stir to coat. Cover, and refrigerate for at least 30 mins. If you marinate the prawns for too long the lime juice will start to "cook" the prawns
4 Preheat barbecue for medium-high heat. Thread prawns onto skewers, piercing each first through the tail, and then the head.
5 Brush cooking grate with oil. Cook prawns for 5 minutes, turning once, or until opaque.
6 Serve with a fresh green salad or home made salsa
 
Note. If more servings are required adjust the marinade quantities accordingly)
