Flavoursome Caribbean style grilled fish

Ingredients

 6 pieces white fish fillets, about 3/4 inch (2 cms) thick skin & bones removed

4 shallots (eshcallot), peeled and finely chopped

4 cloves garlic, minced

1 cup orange juice

1 cup white wine

1/4 cup dark rum

juice of 2 limes

2 tablespoons fresh chopped rosemary

1/4 cup  light soy sauce

1/4 cup chopped parsley

1/4 teaspoon white pepper

1/4 teaspoon salt

Instructions

1 Combine all ingredients (except fish) in a saucepan, bring to boil & then simmer over a low heat until liquid reduced by half

2 Heat grill on BBQ and grill fish for about 3-4 minutes each side

3 Alternative option is to wrap fish in foil or banana leaves with 1 tbs of  liquid

4 Remove fish & serve hot with fresh salad or hot white rice
