Classic French upside down tart

2 pounds (900 gms)  - about 5 to 6 medium sweet-tart cooking apples, cored and peeled

1 sheet frozen puff pastry

4 tablespoons butter

2/3 cup granulated sugar

1/2 teaspoon fresh lemon zest

1/4 teaspoon ground cinnamon


1 Preheat oven to 400 F (200C)

2 When dough reaches room temperature cut into 11 inch ( 28 cm ) circle & chill

3 Melt the butter in a 10 inch ( 25 cm ) ovenproof pan/skillet add the sugar and cook for 4-5 minutes, shaking the pan occasionally to evenly caramelise the sugar - be careful not to burn

4 When the sugar has turned a medium brown colour remove  the pan from the heat and set aside

5  Cut the apples lengthwise into 1/3 inch (8 cm) slices. Cover the slices completely with the lemon zest, cinnamon, & allspice.

6 Arrange the apples in a single layer in the hot caramel in the pan

7 Return the pan to the stovetop and cook the apples over a medium heat for 15 minutes until they start to turn tender

8 Remove the pan from the heat & cover the pastry over the apples, pushing the excess pastry down the inside of the pan between the fruit

9 Bake in the preheated oven for 25- 30 minutes, until the pastry turns golden brown
