Winemaking at Coriole is a very traditional process. Red wines are mainly open fermented in stainless steel or old wax lined concrete tanks. Ferments are hand plunged. New oak is used but many wines such as Sangiovese and Redstone Shiraz are specifically matured in older oak to gain maturity but with minimum contribution of oak flavour and extract in the wine. It is an old maxim that good wine is made in the vineyard.
One of the features of the wine Courtyard lunches are available at Coriole on Thursday, Friday, Saturday, Sunday and Monday. Reservations are from 12pm till 2.30pm and are highly recommended. The Restaurant is housed in the rustic courtyard complete with a fireplace and the enclosed Veranda with views across the McLaren Vale region.

Apart from our well-known wines, there are always opportunities to taste wines exclusively available in cellar door. The cellar door also stocks Coriole food products such as Extra Virgin Olive Oil and Kalamata Olives.
Open Monday to Friday: 10am-5pm Saturday, Sunday and Public Holidays: 11am-5pm. Closed Good Friday and Christmas Day.
