Ingredients

  • 3 lbs (1.3 kgs) frozen chopped spinach
  • 2 - 3 tbs melted unsalted butter
  • 1 cup white  onions, chopped
  • 1 onion, chopped
  • 1 cup fresh parsley, chopped
  • 1 lb (1/2 kg) feta cheese, crumbled
  • 2 cups cottage cheese
  • 1 tsp dried dill
  • 1 tsp pepper
  • 1 tsp sea salt 
  • 1/2 cup olive oil 
  • 1 lb (1/2 kg) frozen filo pastry
  • 3-5 eggs
  • Note. For smaller quantities just pro rata ingredients

Instructions

  1.  Defrost spinach  gently squeeze all water
  2. In a large bowl mix spinach, green onions, onions, parsley, feta, cottage cheese, dill, pepper, sea salt, olive oil, and 3-5 eggs
  3.  In a square baking pan, place 1/3 of the filo leaves, brushing each with melted butter. Pour spinach mixture on top.
  4.  Pour spinach mixture on top. Cover with remaining filo leaves, brushing each with melted butter
  5.  Bake at  350 F (180 C) degrees for 50-60 minutes until brown on top
