Pork "yakitori" skewers enhanced with ginger


Yield 4 servings
Preparation time 15 mins + 4 hours marinating
Cooking time 15mins
Main Ingredient Pork


400 gms (14 ounces) Pork fillet, thinly sliced

2 cups sushi rice

Stemmed greens such as bok choy 

Bamboo skewers soaked in water


1/4 cup Japanese soy sauce

100 gms. ( 3 1/2 ounces) Pickled ginger

100 ml. ( 3 1/2 ounces) Mirin

1 cup Castor sugar

100ml Green ginger wine


1 Simmer all marinade ingredients in a small saucepan until liquid is reduced by half. Set aside 1/2 cup

2Marinate pork with remaining liquid for 4 hours in refrigerator

3 Remove pork from frig and thread 3-4 pieces on each skewer

4 BBQ (preferable) or pan fry for 3-4 minutes each side, basting often. Meanwhile warm reserved marinade

5 Serve hot with steamed sushi rice and green vegetables drizzled with reserved marinade
