Description

A dish of stir-fried rice noodles with eggs, fresh salad, spices & prawns

Main Ingredient Rice Noodles

Ingredients

4 tsp (approx) fish sauce 

2 tbs tamarind juice (ready-made concentrate or freshly squeezed pulp)

3 cloves garlic, minced

1 shallot, minced 

4oz/100g bean sprouts 

2 tbs vegetable oil 

1oz/100g dried shrimp, soaked

8oz/200g peeled prawns, whole 

small bunch of chives, or 2/3 spring onions, sliced

2 tbs crushed peanuts 

2 tbs palm sugar 

juice from 1/2 lime

2oz/200g fried tofu, cubed

Instructions

1 Soak the noodles in warm water for 15 minutes or until soft

2 Preheat wok on high heat

3 Add one tablespoon of oil and the shrimp.

4 Stir fry for one minute or until just cooked

5 Add rest of oil, put in garlic and drained dried shrimp, stir-fry until garlic first starts to brown

6 Add noodles and stir for 30 seconds

7 Place noodles to the side, add beaten eggs - cook until they start to solidify

8 Combine chopped egg with noodles and add fish sauce, shallots, palm sugar, tamarind

9 Stir and let cook for 30 more seconds so ingredients come together

10 Add bean sprouts, tofu and chives/spring onions and stir

11 Remove from heat, place in serving dish

12 Sprinkle on lime juice, and garnish with crushed peanuts
