Ingredients

Salad

1 small head  iceberg lettuce

1 small cucumber

1 small tomato

1 small red onion

200 - 300 gms (7-10 ounces)  Greek feta cheese ( best quality available), crumbled

Kalamata olives -   to taste

Anchovies in oil - to taste

2-3 small mixed capsicums/peppers

Dressing

1 cup olive oil 

1/2 cup balsamic vinegar

1 tsp sea salt 

1 tsp pepper

1 clove garlic, crushed

1 tsp dried Greek oregano 

Dressing

1 cup olive oil 

1/2 cup balsamic vinegar

1 tsp sea salt 

1 tsp pepper

1 clove garlic, crushed

1 tsp dried Greek oregano 

 

Instructions

1 Blend all dressing ingredients until smooth & creamy - adjust seasonings to taste

2 Cut lettuce, cucumber, tomato, and red onion to desirable size. Garnish with feta, olives, capsicum/peppers , and anchovies (drained from oil). 

3 Pour over dressing & serve
