Modern adaptation of the traditional pancake recipe

Main Ingredient Vegetables


500 gms (1 pound) mixed vegetables shredded (cabbage,carrot,white radish, pumpkin)

1 cup bean sprouts - washed

2 small shallots finely chopped

2 x 200gm (7 ounces) Udon noodles, soaked in warm water

4 eggs beaten

1/2 cup Corn flour

1/4 tsp chilli powder

1/4 tsp salt & white pepper

2 tbsp Sushi seasoning

2 sheets Yaki Nori (dried seaweed sheets) finely shredded

1 tbs oil

Japanese mayonnaise & pickled ginger as garnish


1 Beat together eggs, cornflour, chilli, salt/pepper & sushi seasoning

2 Heat oil over medium heat in small/medium non - stick frying pan

3 Cover the pan with vegetables & noodles and cook for 1 minute

4 Pour enough egg mixture to cover vegetable & noodles

5 Cook on high until egg mixture is set and edges have browned

6 Add a handful of bean spouts and sprinkle nori, fold pancake in half

7 Serve with mayonnaise & pickled ginger
